Food safety presents a serious global public health concern. In Malawi, the field of fish quality and processing which covers aspects of value adding is relatively new. Institutions of higher learning which have a great mandate of capacity building (training) need to be well equipped for the same. The Department of Aquaculture and Fisheries Science at Bunda College trains students at undergraduate and graduate levels including PhDs. This manual is therefore a collection of a selection of important areas that need to be covered in the field of fish processing and quality management
